Ingredients1/4 cup Italian-style breadcrumbs
1/4 cup grated Parmesan cheese
1/4 tsp salt
1/4 tsp Garlic Powder
1/8 tsp pepper
1/4 cup milk
2 medium zucchini, sliced into 1/4-inch thick rounds
Preparation
1. Preheat oven to 425 degrees.
2. Combine the breadcrumbs, parmesan cheese, garlic powder, salt and pepper in a medium bowl.
3. Place milk in a shallow bowl. Dip zucchini slices in milk, and dredge in breadcrumb mixture.
4. Place coated slices on an ovenproof wire rack coated with cooking spray, then place the rack on a baking sheet. Bake for 30 minutes or until browned and crisp. Serve immediately.
